Calcium rich fresh paneer cubes are simmered lightly with a rich buttery onion-tomato sauce & spices, flavored with pleasantly bitter dry fenugreek leaves & further enriched with cashew
nut paste.

This recipe is easy & quick to make. Within minutes you will have a restaurant style paneer butter masala.This curry is perfect for parties or treat your family once in a while.


Ingredients:


250 gms paneer (cottage cheese) cubes
1/2 cup tomato puree
1 tsp ginger & garlic paste
1/4 tsp cumin seeds
1 tsp red chili powder
1 tsp coriander powder
1/4 tsp turmeric powder
1/2 cup onion paste
1 tbsp cashew nut paste
1/2 tsp garam masala
2 green chilies chopped
1 tbsp coriander leaves chopped
1/2 tbsp kasoori methi crushed
1 tbsp oil
Salt to taste


Method:


1. Heat oil in a pan, add cumin seeds, onion paste & saute till it turns
    golden brown in colour.

2. Add ginger & garlic paste, green chilies & stir for 2 mins.

3. Add cashew nuts paste, tomato puree & saute further for a few
   mins.

4. Add red chili powder, turmeric powder, coriander powder & mix well.

5. Add garam masala, salt, enough water, cook till  oil separates &
    gravy becomes thick.

6. Sprinkle kasoori methi & mix in lightly.

7. Add  paneer pieces to the masala gravy, mix well & cook for 2-3 mins.

8. Garnish with butter & coriander lives.

9. Serve hot.

Stuffed Bhindi

Stuffed bhindi offers a novel & tasty twist to a typical bhindi (lady finger) masala or fry recipe.
The rich and delicious stuffed bhindi can be made easily at home.

Its name itself gets juices flowing in the mouth. Dry, shallow fried, spicy masala filled bhindi is
a heavenly experience in every bite & it’s a choice food during special occasions.

Ingredients:


250 gms bhindi /okra
1/4 tsp asafoetida
1/2 tsp cumin seeds
1 tbsp oil

For stuffing:


1/2 tbsp coriander powder
1/4 tsp turmeric powder
1 tsp red chili powder
1 tsp roasted cumin powder
1/4 tsp garam masala powder
2 tsp desiccated coconut powder
Salt to taste


Method:


1. Mix all ingredients for stuffing in a bowl. Keep aside.

2.  Wash & dry bhindi. Make a slit length wise in each bhindi.

3. Stuff  all bhindi, keep left over stuffing aside.

4. Heat oil in a pan,  add cumin seeds, asafoetida & saute for few seconds.

5. Add stuffed bhindi,stir it well & Cook on low flame without lid.

6.  Stir it every few minutes to allow even cooking on all sides. 

7. When bhindi is cooked ,add left over stuffing, mix well & cook for 3-4 mins.

8. Turn off heat. Serve hot.

No one can believe that potato halwa can be as much delicious. It is a rich in nutrient sweet
dish prepared from the mix of mashed potatoes, ghee & sugar. Can be an easy dessert recipe for unannounced guests using handy ingredients.

Ingredients:


3 large potatoes boiled 
1 tbsp ghee
1/2 cup sugar
1/2 tbsp cashew nuts chopped 
1/2 tbsp almonds chopped
1/2 tbsp pistachio chopped
1/2 tsp cardamom powder



Method:


1. Peel off boiled potatoes & mash. Keep aside.

2. In a pan heat ghee, roast mashed potatoes into it for 1-2 mins. 

3. Add sugar & mix well.

4. Cook for another 2-3 mins stirring frequently.

5. Add cardamom & dry fruits, stir once & turn off the flame.

6. Garnish with chopped almonds, pistachio.

7. Serve hot.

Sabudana Vada

Sabudana vada is an extremely popular during the Navartri/Shravan festival time among 
the Indians. These can also be enjoyed during the rest of the year.

These are crispy on the outside, soft & chewy inside with an occasional crunch from the peanuts.The soft sabudana, potatoes provide the heartiness & make this very filling.

Fried dumplings of sago & potatoes great during fast. This can satisfy just about anybody,
even those on a gluten-free diet. 

This is also popular snack when it’s raining. On raining days, any one can enjoy sabudana
vada with a hot cup of tea.  


Ingredients:


2 cup sago (sabudana)
1 cup boiled & mashed potatoes
1/4 cup peanut roasted & crushed
1-2 green chilies chopped
1 tbsp chopped coriander leaves
Green chutney for serving
Oil for frying
Salt to taste

Method:


1. Clean,wash sabudana. Drain & keep aside for 3-4 hours in 1 cup of water.

2. Take sabudana in a bowl, add mashed potatoes, peanuts, green chilies,
     coriander leaves, salt & mix well.

3. Knead lightly to form a soft dough. Don't over knead the dough, otherwise it will
    become sticky.

4. Divide mixture into equal portions. Apply little oil on plam & shape each portion
    into a round & flatten slightly.

5. Now heat oil in a pan, deep-fry vadas till golden brown  from both sides.

6. Drain on absorbent paper.Follow same with remaining vadas.

7. Serve hot with green chutney.
