Kala Chana Masala


Kala chana Masala (Black Chickpeas Curry) is a very delicious, healthy & spicy North Indian curry/dish. Kala Chana is also known as Bengal gram. Kala Chana (black chickpeas) is an excellent source of protein. 


Kala Chana Masala


Ingredients:


1 cup kala chana (black chickpeas)
1 onion chopped 
2 tomatoes chopped
1/2 tsp cumin seeds
1/4 tsp turmeric powder
1 tsp red chili powder
1/2 tsp garam masala
1/2 tsp chana masala
1/4 tsp asafoetida
1 tbsp coriander leaves
1/2 tsp coriander powder
2-3 green chili chopped
1/2 tsp garlic chopped
Pinch of soda bicarb
1 tbsp oil
Water as required
Salt to taste


Method:



1. Clean & soak chana (black chickpeas) in enough water over night.

2. Pressure cook black chickpeas with water & soda bicarb till done.

3. Heat oil in a pan, add cumin seeds, crackle them, add asafoetida, 
    chopped onions. Saute onions till onion become light golden.

4. Now add garlic, green chili & saute for another 2-3 sec.

5. Add tomatoes & cook till done.

6. Add red chili powder, turmeric powder, coriander powder, salt &
    cook  for 2-3 mins.

7. Add cooked black chick peas, garam masala, chana masala, some
    water, mix well & cook for 3-4 mins.

8. Transfer them in a serving bowl, garnish with coriander leaves,
     serve hot with roti/rice/paratha.

Peda ..... word is a symbol of celebration among Indians. A huge variety of pedas are there & "Kesar Peda" is one of them.Kesar Peda is a delicious recipe with flavor of saffron, cardamom richness of mawa & sweetness of sugar. Kesar Peda is a very easy & quick recipe can be prepared in mins. A perfect sweet dish for this Diwali.

Ingredients:



500 gms soft mawa

200 gms powdered sugar

1/2 tsp cardamom powder
1 tbsp chopped pistachios
1 tsp strands of saffron
1 tbsp warm milk

Method:


1. Heat mawa in a pan, add sugar & cook it till become soft.

2. Soak saffron in warm milk.

3. When mawa is thick, add cardamom powder, soaked saffron,
    mix well & cook for 5-7 sec.

4. Transfer it in a big bowl & allow it to cool.

5. When the mawa is cool enough, divide it into small equal portions
    & shape each portion into ball.

6. Press balls with a peda mold or with palm. Let them cool down.

7. Garnish with chopped pistachio.

8. Kesar pedas are ready to offer Goddess Lakshmi.

Kaju Pista Roll .... A cashew nut & pistachio flavored Indian delicacy. Delicious rich cashew stuffed with pista that simply melts in your mouth. This dessert is perfect for festival like Diwali
& winter months also. This rich & tasty sweet kaju pista roll is worth trying.


Kaju Pista Roll


Ingredients:


1 cup cashew nut (kaju)
1 cup pistachio (pista)
1 tbsp ghee
1 tsp cardamom powder
5-6 almond chopped

For sugar syrup:


1/2 cup sugar, 1/4 water for cashew nut dough
1/2 cup sugar, 1/4 water for pistachio dough


Method:



1. For kaju dough powder cashew nut in a dry mixer & keep it aside.



2. For sugar syrup boil 1/2 cup sugar, 1/4 cup water in pan & cook it till it 
    reaches one string consistency. 

3. Now add powdered cashew nut, 1/2 tsp cardamom powder, mix well &
    cook it mixture thickens.

4. Transfer it into a bowl & allow it cool.

5. For pista dough powder the pistachio in dry mixer.

6. Now make syrup boil again 1/2 cup sugar, 1/4 cup water in a pan &
    cook it till syrup reaches one string consistency.

7. Add powdered pistachio, 1/2 tsp cardamom powder in syrup mix well &
    cook till mixture thickens.

8. Transfer it also in a different bowl & allow it coll.

9. Divide kaju dough in 2 parts. Take one part, place it on a greased
    plastic  sheet & roll it into a rectangle.

10. Divide pista dough also in 2 parts.Take one part & give it a long
      cylindrical shape with your greased palms.

11. Now place this cylindrical shaped pista dough on to rectangle cashew
      dough's corner & start rolling till end of cashew dough.

12. Cut this cashew pistachio roll into 4-5 inch peaces.

13. Repeat same process with remaining cashew & pista dough. 

14. Place rolls in serving plate, garnish with chopped almond & serve.

Pista Burfi is a delicious, traditional & very popular Indian sweet.This dish is prepared on special occasions & festivals. Pista Burfi has a nutty flavor. Pista, sugar, mixed with fresh
creamy mawa & 
the mild flavor of cardamom mixed to gather & the result is a ......very attractive, mouth watering & delicious burfi which adds to the delicacies of this festive season.....Pista Burfi is treat for this Diwali........I bet !!!



Pista Burfi


Ingredients: 



1 cup pista (pistachio)
1/2 cup mawa
1/2 cup sugar
1/2 tsp cardamom powder
2-3 drops of green food color (optional)
3-4 almonds finely chopped
Water as required

Method:

1. Soak pista (pistachios) in warm water for half an hour.

2. Drain all water, peel pista (pistachio) & blend it to a fine paste. Keep aside.

3. Heat sugar, 1/2 cup of water in a pan & prepare a sugar syrup of one string consistency.

4. Roast mawa in pan for 2-3 mins. Stir it continuously. Switch off the heat, let it cool.

5. In a bowl mix pista paste, mawa, cardamom powder & green color. 

6. Pour this mixture into the sugar syrup & mix well.

7. Cook it on a slow flame, stir continuously, till mixture leaves the sides of the pan.

8. Transfer the paste to a greased plate, let it cool & set for an hour.

9. Cut the burfi into desired shape, garnish with chopped almond.

10. Pista barfi is ready for Diwali.
