Onion Tomato Chutney is very versatile, easy, quick to prepare & a delight to have. Tomato, onion & spices are used as main ingredients which are easily available in your kitchen.


Onion Tomato Chutney


Ingredients:



1 onion medium size
3-4 tomatoes
1/2 tsp red chili powder
A pinch of asafoetida
1/2 tsp mustard seeds
4-5 curry leaves
1 tsp oil
1 tsp sugar
Water as required
Salt to taste

Method:


1. blanch tomatoes in hot water, peal & chop them roughly.

2. Make a fine paste of onion.

3. Heat oil in a pan, add mustard seeds, when crackle, add curry leaves,
    onion paste, cook it for some time.

4. Now add red chili powder, asafoetida and roughly chopped tomato.

5.  Add salt, sugar & water as required mix well .

6. Cook on medium flame for 4-5 mins or until the chutney gets the desired
    consistency.

7. Serve with any breakfast or snack dish.

This is a so easy to prepare recipe, can be made with both fresh and frozen peas. This refreshing spring soup makes a perfect start to a meal.


Ingredients:



2 cup fresh green peas

1/2 cup fresh cream
1/2 tsp ginger garlic paste
1/2 tsp pepper powder
1/2 tsp lemon juice
1 tsp coriander leaves
1 tsp oil
Salt to taste


Method:


1. Blend green peas using little water into a smooth paste.

2. Heat oil in a pan, add ginger-garlic paste, saute for 1-2 sec.

3. Now add peas paste, pepper powder, salt,lemon juice.

4. Let it boil for 3-5 mins.

5. Add fresh cream & boil it few sec.

6. Turn off the heat.Transfer soup into a serving bowl.

7. Garnish with fresh cream, coriander leaves & serve hot.

Ingredients:



2 cucumber
1 radish
2-3 carrots
2-3 tomatoes
1 tbsp coriander leaves
1 tbsp lemon juice
1 tsp black pepper powder
2 tsp olive oil
Salt to taste

Method:


1. Wash & wipe all the vegetables.

2. Cut the cucumber in desired shape. I have cut it in leaves shape.

3. Slice the tomatoes in circular shape. 

4. Now grate carrot, radish.

5. Take a bowl, add olive oil, black pepper, salt & lemon juice. Mix it well.

6. Add this dressing separately in cucumber, radish, tomatoes & carrot. Toss them well.

7. Take a serving plate, arrange the cucumber in a circle, then grated carrot & radish.

8. In the center put tomato slices one over the other. garnish with coriander leaves.

9. Healthy vegetable salad is ready to serve.

Makar Sankranti  is one of the auspicious festivals celebrated in India, shows the arrival of spring season. This Sankranti also called 'Til Sankranti'.Til means Sesame Seeds. Distributing & consuming sweets made of Til on Makar Sankranti is a ritual. Til ki burfi is a very popular among them.

Til  ki burfi is a delightful combination of sesame seeds, soft khoya & sugar. Til ki Barfi is quite 
nutritious because Til is very rich in iron, calcium, magnesium & also in phosphorus. Til ki burfi is made during winter months as sesame seeds are thought to have heating properties.

Til ki Burfi is a tasty & easy home made sweet....can you get more festive & healthy than this !!!


Ingredients:



400 gm til (sesame seeds)
200 gm khoya 
400 gm sugar
1 tsp cardamom powder
11/2 cups water
1 tbsp coconut powder for garnishing


Method:

1. Take a pan, roast til lightly on low heat. As soon as they puff up, turn off the heat.

2. Cool down the sesame seeds. Grind it coarsely.

3. Now roast the khoya, stir constantly & make sure that it does not brown. Keep it aside.

4. Mix sugar & water, make sugar syrup of 2 wire consistency.

5. Now add sesame powder, khoya, cardamom powder to sugar syrup. Cook on slow
    heat 
while constantly stirring.

6. The whole mixture will start coming together & bind.Turn off the heat.

7. Grease a tray with ghee, pour mixture on tray. 

8. Spread it evenly, garnish with coconut powder, let it cool for some time.

9. Cut the burfi in desired shape.

10. Til ki burfi is ready for Makar Sankranti.

Vada Pav


Vada Pav is one of the most popular & favorite street foods in Maharashtra. Mumbai’s very own burger & most loved snack.

In Vada Pav... Pav is a bun bread, Vada is a potato mixture coated with gram flour batter & deep fried, served with spicy garlic chutney. Fried green chili is also served with this.


Ingredients:

4 pav/bun
Red chutney
Green chutney



For vadas filling:



4 potatoes 
1 tbsp coriander 
1 tbsp oil 
1/2 tsp green chilies finely chopped  
1 tsp ginger garlic paste
1 tsp mustard seeds
1 tsp cumin seeds 
1 tsp turmeric powder 
Salt to taste 

For outer covering:


1 cup gram flour (basen)
1/2 tsp turmeric powder
1/2 tsp red chili powder
1/2 cup water
Oil to deep fry
Salt  to taste

Method:


1. Pressure cook potatoes, peel & mash it.

2. Heat the oil, add mustard seeds, let them crackle, now add cumin
    seeds, ginger-garlic paste & green chilies.

3. Next add mashed potatoes, turmeric powder, coriander, salt & mix well.

4. Remove from fire, allow it to cool, divide into equal portion & make
   small balls.

5. Combine gram flour, salt, turmeric powder & chili powder.

6. Add water, form a paste like we do for pakodas.

7. Take balls one by one, dip into gram flour paste, deep fry vadas till
     golden brown. 

8. Drain on absorbent paper & keep aside.

How to serve:


1. Slice each pav into two, apply red chutney on bottom side & green
    chutney on top side.

2. Take one vada, press a little bit. Put it on bottom slice of pav, top with
    other slice.

3. Vada pav is ready to serve.
