Missi Roti is an Indian recipe made with wheat flour, gram flour, fenugreek leaves, coriander leaves & seasoned with spices. it's a good change from regular rotis & healthy option too.

It is a very delicious dish goes with all kind of dals & curries. It is always yummy & perfect for any meal.


Missi Roti

Missi Roti gets its unique flavour from wheat flour & besan...but to change the taste other
multi grain flours can also be used. This is one dish one should not miss out! 


Ingredients:



1 cup besan (gram flour)
1 cup atta (wheat flour)
3 tbsp fresh methi (fenugreek) leaves finely chopped 
3 tbsp fresh coriander leaves finely chopped
2-3 finely chopped green chilies
1/2 tsp red chili powder
1/4 tsp turmeric powder
1/4 tsp coriander powder
1/4 tsp ajwain (carom seeds)
1/4 tsp cumin seeds
1 pinch of asefoetida
Water as required
2 tsp oil
Butter/ghee
Salt to taste


Method:


1. In a large bowl, add besan, whear flour, methi, coriander, green chilis, red chili powder,
    turmeric powder, 
coriander powder, ajwain, cumin seeds, asefoetida & salt. Mix it well.

2. Add oil, rub it in the flour. Mix well.

3. Make a whole in middle, gradually add water. Knead into a smooth tight dough. keep it
    for 20 
mins under a covered cloth.

4. Knead dough again for a couple of mins. Divide it into small equal balls.

5. Roll into a slightly thick chapati than usual. Dust with more flour while rolling to prevent from 
    sticking if necessary.

6. Heat a tawa on medium heat. 

7. Cook missi roti with or without oil/butter/ghee. Cook both sides until rustic brown spots
    appear on 
them. 

8. Remove from heat. Apply butter/ghee on it.

9. Serve hot with dal or any curry vegetable.


Tips:


1. Missi roti can aslo be cooked in an oven or tandoor.

2. Dried fenugreek leaves (kasori methi) can be used instead of fresh methi leaves.

3. Grated ginger & chopped onion can also be used to give roti a different taste.

Lauki Kofta Curry is a popular, delicious, healthy Indian curry which goes well with rice, chapati & parathas. This recipe is perfect for a regular lunch, dinner or even to be included on party menus.

Lauki is also known as ghiya, doodhi/dudhi or bottle gourd is available in all seasons. It has more water content, so it is helpful to deal with the heat, it prevents exhaustion in hot Indian summer.



Lauki Kofta Curry



This recipe comprises of two things, 1st: koftas are made of bottle gourd, gram flour & spices, 2nd: tomato-onion-yogurt gravy. These two mixed together makes an awesome curry. You can also use cashew paste or cream to make it creamy & rich.


Ingredients:


For koftas:

1 medium size lauki (bottle gourd )
1/2 cup besan (gram flour)
1/2 tsp red chili powder
1/4 tsp turmeric powder
1/4 tsp cumin seeds
1 tsp coriander leaves chopped
2-3 green chilies chopped
Oil for deep-frying
Salt to taste

For gravy:


2 medium onions
3-4 tomatoes
2 tbsp yogurt
1 tsp ginger-garlic paste
1 tsp red chili powder
2 tsp coriander powder
1/2 tsp turmeric powder
1/2 tsp cumin seeds
1/2 tsp mustard 
1/2 tsp garam masala
1 tbsp of coriander leaves 
A pinch of asafoetida
1 1/2 tbsp oil
Water as required
Salt to taste


Method:


1. Peel lauki, grate it, shift it to a bowl, add gram flour & mix it.

2. Now add red chili powder, turmeric powder, cumin seeds, green chilies, coriander leaves,
    salt & gently fold. The result should be a
 thick batter.

3. To make koftas, slightly wet your plalms & make koftas of batter.

4. Heat oil, deep fry koftas on medium flame until they are golden brown.

5. Drain oil & shift to absorbent paper to soak excess oil.

6. To make gravy, puree the tomatoes, grate onions.

7. Heat oil in a pan, add mustard seeds, cumin seeds when they splutter add onions.
    Saute till they are golden brown. 

8. Now add ginger-garlic paste, asafoetida & mix well for another minute. 

9. Add tomato puree, mix well & add turmeric powder, coriander powder, red chili powder,
    garam masala. Saute until oil separates. 

10. Now add 2 cups of water, season with salt, let it boil for some time.

11. Now gently add koftas, boil it for 4-5 mins. Add yogurt & mix well.

12. Shift it to serving bowl, garnish with coriander leaves.

13. Serve hot with roti/naan/rice/paratha.

These veg sandwiches are soooo simple, easy & quick to prepare. One can do lot of variations in this also acceording to his/her choice.

So this Valentine's Day make this delicious & heathy dish for all the sweeties in your life. 

Ingredients:



10-12 slices of bread

8 tsp butter

1/2 cup green chutney 

1/2 cup mix fruit jam

1 tsp chat masala

2 medium sized cucumber, peeled & cut into thin slices
1 medium sized onion, peeled & cut into thin slices
2 medium sized potatoes, boiled, peeled & cut into slices
3 medium sized tomatoes, cut into thin slices


Method:


1. Trim off edges of each slice of bread & cut them into heart shape with the help of mold
     or knief.

2. Take one slice of bread, apply butter & green chutney on it.

3. Arrange slices of cucumber, onion, potato & tomato over it & sprinkle chat masala.

4. Place another slice of bread, apply butter & mix fruit jam over it.

5. Again arrange slices of cucumber, onion, potato & tomato over it & sprinkle chat masala.

6. Place another slice of bread, with buttered only facing downwards & press it lightly.

7. Decorate it with a dot of mix fruit jam on the top of sandwich.

8. Valentine veg sandwiches are ready to serve to your loved ones.
